Blackened Sockeye Salmon

Serves: 4

Ingredients:

  • (4) 8 oz Sockeye Salmon fillets
  • 2 tbsp canola oil
  • Blackened Spices:
  • 1 tbsp dried thyme
  • 1 tbsp dried oregano
  • 1 tbsp paprika
  • 1 tbsp black pepper
  • 1 tbsp cayenne pepper
  • 2 tsp garlic powder
  • Salt to taste

Prep:

In a small bowl, combine all of the blackened spices.

Brush each side of the Sockeye Salmon fillets with oil and evenly coat with the seasoning mix.

Add the remaining oil to a large skillet and heat to medium-high heat. Place the salmon fillets in the skillet and reduce heat. Cook for about 5-6 minutes on one side and flip over for a further 5 minutes, until the outer coating is crispy.

Serving suggestion: For a healthy dinner combo, serve up with quinoa salad or brown rice and garlicky kale.
